Ruben Soto Bio:
Ruben N. Soto, born in Sonora Nogales, Mexico. December 28th 1976 and raised in Tucson, Arizona.
As a young boy Ruben always had a niche for cooking some of the shows he watched where cartoon's “Thunder cats was my favorite” but he also would see shows on etiquette. ”My sisters always thought I was weird for watching those type of shows” His favorite cooking shows like Julia Childs, Justin Wilson & The Galloping Gourmet. Ruben also learned some of the traditional Mexican dish’s from watching and taking mental notes from his tia’s “I may not be able to remember last month but I do remember some of the recipes as a young boy like frijoles, atole and verdolagas just to name a few”
Ruben starting cooking at a young age, “I must have been seven or eight, I remember just being able to look over the stove” and eggs was the first he cooked. Now he cooks everything from Greek, Italian, American, Japanese, Chinese, and of coarse Mexican. Ruben plans to broaden his culinary dexterity in Brazilian & Spanish foods. He started working at the age of 16 in a popular local Mexican restaurant Micha’s he started as a busboy and was very eager to learn the business and moved up very quick, before you knew it Ruben worked his way from the very bottom to the very top he created a Catering menu and designed a web site and increased there restaurant menus by 100% in which increased sales. He learned lots of new dish’s and desserts there and he was able to experiment with his own dishes “I make a delicious Tequila & lime chicken flambé”
After fourteen years of hard work and dedication, Ruben still wanted more. And made the choice to leave and open up his own Catering business. Catering Internacional has been in business for three years, “I’m still a growing company and hope I’m very successful” Ruben’s clients have been lots of corporate companies, Raytheon, Intuit, and Grainger just to mention a few, also family and friends. He also had the great honor of cooking for Chef Susana Davila who is a world renowned Chef & owner of Café Poca Cosa ‘it was really cool for me because I also would watch her on the Discover channel as a kid and she has ordered my services more than once”
Catering Internacional also tries its best to give back to the community, providing food and his services to local charities. Ruben has also been working with Sun Sounds for the last seven years. Sun Sounds Beer Fest is held at High Corbett Field once a year, the money raised there goes to books and audio for children that are blind.
Ruben has always been fascinated with Mexico, its people, architecture, music, holidays and most important the food. “I feel even though I have not spent much time there, other than to go on vacation, Mexico has always been a missing piece of my life and my heritage” He also plans to learn more foods from South of Mexico, like Zacatecas, Oaxaca, Puebla, Mexico City & all the little cities in between.
